Ok, this isn't exactly marketed as a "Redi Set Go" unit, but it sure is similar! This one is copper-infused ceramic instead of the old Teflon coating that users were reporting for flaking. This new unit is reminiscent of the very first line of GT Xpress Cookers. There are currently no inserts for this unit (and to my knowledge, there are no plans to make inserts). But this unit will really ease the minds of those who are "iffy" about using Teflon products.
I was scanning Ebay (as I often do), and I stumbled onto this. Usually these go for a little more money, so this is a pretty good price for anyone looking for the old recipe booklets. :)

Traditionally, this Italian dish is fried in oil, but this time we're grilling it up in our Redi-Set-Go. These little breaded balls of rice typically have cheese, vegetables, or meat at the center. This is a "lightened up" version of the fried original. I like to make these with brown rice, but I had a container of leftover white rice from the Chinese restaurant sitting in the fridge. I figured this was the perfect way to use it up! :)
For those of you who own a GT Xpress 101, Xpress Redi-Set-Go, or an Xpress Platinum,
you know that there are only a few ways to get recipes: (1) sign up

member, or (3) find recipes online from various sources.

happen to frequent thrift stores, and occasionally I am lucky enough to
run across the recipe booklets from the "Easy Eatin' Recipe Club."
That's where this little booklet came from. It's in very good
condition. Even though the booklet is marked for the "Redi-Set-Go"
grill, the recipes will work in the Xpress Platinum, and it looks like
they will also work in the GT Xpress 101. :)

Another kid-friendly favorite in our house! What's better than a grilled cheese? A pizza-inspired grilled cheese! Coating the outside of the sandwich in Parmesan cheese makes a delicious and flavorful crust that is reminiscent of Italian cuisine. We like to dip ours in an Italian (red) sauce like spaghetti sauce or marinara. This would probably be really good dipped in a hearty tomato soup as well. Try giving it more of a "pizza" flavor by sprinkling some Italian seasoning on the mozzarella cheese before cooking.
The kid in me (and the kid in my house) will always love two things: mac & cheese and pizza. This recipe uses both to create a creamy, gooey, yummy, combination of comfort food. This recipe takes the term "comfort food" to a whole new level! I present: The Mac & Cheese Pizza (or as my hubby likes to call it, "Macaroni and Chizza").

For those of you who own a GT Xpress 101, Xpress Redi-Set-Go, or an Xpress Platinum,
you know that there are only a few ways to get recipes: (1) sign up
for the "Easy Eatin' Recipe" club, (2) become an "Xpress Recipe Xchange"
member, or (3) find recipes online from various sources.

I
happen to frequent thrift stores, and occasionally I am lucky enough to
run across the recipe booklets from the "Easy Eatin' Recipe Club."
That's where this little booklet came from. It's in very good
condition. Even though the booklet is marked for the "Redi-Set-Go"
grill, the recipes will work in the Xpress Platinum, and it looks like
they will also work in the GT Xpress 101. :)

When I was a kid, I hated the crust on pizza. It was always left on my plate long after I was done eating. My kid is no different than I was. She loves the ooey, gooey delicious "pizza" part of the pizza - and hates the crust. That's sort of how this crustless pizza pocket was born. It began as just a flat crustless pizza, but rolling it up made it easier to eat for smaller hands. Of course, you could always keep this pizza flat if you like the traditional appearance of pizza. This is also a great recipe when you don't have any pizza dough ready to go and just don't feel like preparing any. It honestly doesn't get much quicker or easier than this!

When I first met my hubby, I remember he used to put peanut butter on his French toast. I thought he was insane. I was a French toast "purist" and believed that simple French toast could never be improved upon; it was perfect just the way it was! Fast forward years and years (and maybe even a few more years) later, and I finally tried a classic stuffed French toast (the kind with cream cheese). I thought I would hate it, but it was actually quite good. Then one day I remembered my hubby's love of peanut butter smeared on French toast. That's when I came up with the peanut butter stuffed French toast. In this version I use banana, but it's good with other fruits as well.

Blueberries are incredibly good for you. Unfortunately, I'm not a big fan of plain ol' blueberries, and I need to jazz them up if I'm going to eat them. I enjoy them in muffins, pancakes, waffles, and in this awesome breakfast sandwich! I make this sandwich with strawberry cream cheese, but you could easily substitute cinnamon cream cheese - or even plain cream cheese! Because this sandwich is so "pretty" in its coloring, it's easy to get my little girl to eat it as well. ;) I used frozen blueberries for this recipe, but fresh would probably be just as delicious!
My kid (and every kid I know, for that matter) LOVES macaroni & cheese! But the problem with mac & cheese is that there isn't much nutritional value. I've tried mixing in pureed carrots, chopped broccoli, and diced peppers. But I've really stumbled onto gold with these mac & cheese boats. She gets to help with the preparation (always a plus) and she gets to eat something fun because we call it "mac & cheese boats." What kid doesn't want to eat their food out of a boat - then be able to devour said boat? The best thing about this recipe is that you don't have to use the microwaveable mac/cheese cups; it works just as well (if not better) with prepared homemade mac & cheese. For the sake of simplicity, I'll be using the mac & cheese cups. The bacon is added for a little extra protein, but you could easily leave it out to keep this dish vegetarian.
We are a pepper people. Try saying that 3 times fast! ;) Anyway, many of the dishes that I prepare include some kind of pepper. I don't generally use the hot peppers, but I do enjoy bell peppers and banana peppers quite a bit. This recipe, as you will see, has both. This particular stuffed pepper recipe has no rice, so it cuts the carbs down a lot as well.
For those of you who own a GT Xpress 101, Xpress Redi-Set-Go, or an Xpress Platinum, you know that there are only a few ways to get recipes: (1) sign up for the "Easy Eatin' Recipe" club, (2) become an "Xpress Recipe Xchange" member, or (3) find recipes online from various sources.

I happen to frequent thrift stores, and occasionally I am lucky enough to run across the recipe booklets from the "Easy Eatin' Recipe Club." That's where this little booklet came from. It's in very good condition. Even though the booklet is marked for the "Redi-Set-Go" grill, the recipes will also work in the Xpress Platinum, and it looks like they will also work in the GT Xpress 101. :)
My hubby likes sweet potatoes. I have to admit, I'm not a huge fan of them myself - usually. I don't particularly like sweet potato chips or sweet potato fries, but I do enjoy the classic "holiday" sweet potatoes topped with marshmallows. I guess I like my sweet potatoes to be sweet and not at all salty. This easy side dish is reminiscent of those holiday sweet potatoes. It makes a pretty good lunch, as well!

Even grown-ups still love kid-favorites like mac & cheese, pizza, chicken nuggets, and grilled cheese. The grilled cheese sandwich is the ultimate kid "dinner" and I must admit that even I (a self-proclaimed grown-up) enjoy a delicious, gooey, grilled cheese sandwich every now and then. This version, the Grilled Cheese Sophistiqué (or Sophisticated Grilled Cheese), is a version completely for grown-ups - complete with a crunchy, Parmesan crust. The flavor combination is complex, to say the least. This is a sandwich that seems complicated, but is actually quite easy. You won't be sorry you tried this one, I promise!
Stuffed peppers are awesome, but sometimes you may not want the carbs that come along with them. My mom made stuffed peppers about twice a month or so growing up, and they were always carb-laden because they were crammed full of rice. Don't get me wrong, they are delicious! But I wanted a way to cut the carbs down and make them into a side dish or a even a healthy lunch. I've heard of people stuffing their peppers with just cheese, but I need a little more flavor than that. These peppers were my result. And let me just say - this is the most delicious way I've ever eaten a pepper. I could easily eat these every single day! Note: Even though this recipe calls for mini sweet peppers, other small-sized peppers could easily be substituted - such as serrano or jalapeno.
My hubby loves spicy foods. I like mild spice, but he can eat things hotter
than Hades! *Shakes head* I'm not sure how he does it. Spicy flavors
tend to build up on the tongue until your mouth feels like it's on fire! Well,
that's what happens to me anyways. So when I tried out this recipe, I made 2
servings - a mild one for myself and a hotter version for him. I'm giving you
the milder recipe of the two; but if you want to add more spice, by all means,
heat it up with some extra sauce! But be warned, this stuff is hotter than you
might think!
Holy moly! It's been over a year since I've posted any new recipes! It's been an incredibly busy year (I'll spare you the details), but I am back now, and I promise to try to post more regularly here. Let's get to it then, shall we? This recipe is so easy that a child could do it. There's absolutely nothing to it, and there are so many variations that the flavor combinations are practically endless! Sound like something you'd like to try? Then give this recipe a go!

I'm not a huge fan of seafood, but I really enjoy finding new ways to prepare canned tuna. I don't often crave meat, but when I do, tuna is usually where I land - probably because I lack protein and tuna is chock-full of it. The dill dip for these patties is also a good stand-alone recipe. If we ever have extra, we use it as a veggie dip (it's excellent with carrots, particularly) or a sandwich spread. This is a slightly modified recipe that I got out of a cookbook that was given to charity ages ago.

This delicious macaroni and cheese has a secret ingredient - white cheddar popcorn seasoning. WHAT?!? Trust me - it works! It can be served as a side or even as a meal. This recipe can get extremely messy, so you'll want to use the Full Round Pan since it will be easier to clean out. Or you could try lining your Base Unit with foil for this dish, but be careful of tearing the foil when stirring. Another note to keep things cleaner - I put a cookie sheet or a cutting board under the unit when I make this macaroni. It has on occasion, bubbled out a bit.
