Pineapple BBQ Chicken Pizza


Last week I shared a recipe that used cooked chicken.  I wanted to share another one with you this week, just to show you how versatile it can be.  This time we're using it as a pizza topping.  For instructions on how to cook your chicken, see my Pineapple Chicken Teriyaki post by clicking here.

Ingredients:
  • 1 tube refrigerated pizza dough (10 oz size)
  • 4 tablespoons barbecue sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup cooked chicken (thawed, if frozen)
  • 4 tablespoons pineapple chunks, drained

Pan Insert to Use:  Base Unit (or Full Round Pan)

Servings:  2-4  (makes 2 pizzas)

Directions:
1.  Spray grill with non-stick spray and preheat.
2.  Shred cooked chicken:


3.  Roll out pizza dough and divide in half.  Press the first half into the cooking well, being very careful not to burn yourself:


4.  Top with 2 tablespoons of the barbecue sauce, 1/4 cup of the mozzarella, 1/4 cup of the shredded chicken, and 2 tablespoons of the pineapple.  I always throw a little additional cheese on top just because it looks prettier to me.  :)
5.  Close lid and cook for 10-15 minutes. 


6.  Repeat with remaining half of dough and toppings.
