Cinnamon Apple Cake


Another recipe that uses baby food?  You betcha!  :)  However, you don't have to use baby food for this one.  You can use just regular ole' applesauce.  If you opt for the "grown up" version, just replace the baby food with about 4 tablespoons of unsweetened applesauce.

Ingredients:
  • 1 jar of puréed apples, baby food (4 oz size)
  • 1/2 cup flour
  • 1/4 cup + 2 tablespoons light brown sugar, packed
  • 2 tablespoons salted butter, melted
  • 1 tablespoon water
  • 2 teaspoons dried egg white powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon ginger
  • 1/8 teaspoon ground cloves
  • 2/3 cup powdered sugar
  • 1/4 teaspoon cinnamon
  • 3 teaspoons water

Pan Insert to Use:  Full Round Pan

Servings:  6-8

Directions:
1.  Spray grill with non-stick spray and preheat.
2.  Combine first 10 ingredients (apples, flour, brown sugar, butter, water, egg white powder, baking powder, cinnamon, ginger, and cloves) and mix well:


3.  Pour batter into grill, close lid, and cook for 12-15 minutes.  Check doneness with a toothpick.
4.  While cake is baking, combine the powdered sugar, 1/4 teaspoon cinnamon, and 3 teaspoons water in a zippered sandwich bag; knead until smooth:


5.  Remove cake from grill pan and let cool for about 5-10 minutes.
6.  Cut a corner from the sandwich bag and drizzle icing over cake.
